Method

Roasted pineapple and pepper salsa

1) Preheat griddle or griddle pan to high.

2) Place pineapple and mango on griddle for 30 seconds to 1 minute or until desired griddle marks are achieved. Let cool and dice.

3) In a medium mixing bowl combine honey, lime juice, coriander and season, to taste, with salt. Add remaining ingredients and toss.

4) Let sit for 1 hour and serve.
