2 tbsp white sugar
1 red chilli thinly sliced
2 kaffir lime leaves, very thinly sliced
Zest of 1 lime
4 tbsp lime juice
1 tbsp fish sauce
Rice wine vinegar
½ tsp sesame oil

For the salad:

2 cups diced pineapple
1 cup cubed cucumber
1 cup bean sprouts
3 spring onions with tops sliced
2 tbsp chopped coriander
1 tbsp chopped mint
