  • 2 tablespoons vegetable or groundnut oil
  • 1 medium onion, finely chopped
  • 1 red chilli, deseeded and finely chopped

  • ½ red pepper, deseeded and diced
  • ½ yellow pepper, deseeded and diced
  • 2 tablespoons Madras curry paste
  • 400ml coconut milk
  • 1 tablespoon mango chutney
  • 1 lime
  • 1kg monkfish fillet, skinned and trimmed and cut into large chunks
  • 1 tablespoon fresh coriander, finely chopped plus a little extra for garnish
  • Salt and black pepper taste
