1) Put oil in a large saucepan over medium-high heat. Add onion, garlic, ginger and chilli and saute for 3 mins, until onions are softened.
2) Add the spices and toast for 10 secs and then add the tomato puree.
3) Stir well and then add chicken and turn it frequently as it cooks. Add the tomatoes, potatoes, coriander and water and mix well.
4) Bring to a boil and then reduce the heat to a simmer. Cover with a lid and let cook for about 20 to 25 mins, until chicken is cooked through.
5) Serve with rice.
