Method

Caribbean chicken

1) Puree all of the ingredients except the chicken in a food processor. Place the marinade and chicken in a resealable plastic bag, mix thoroughly and allow the chicken to marinate, refrigerated, for 4 to 8 hours.

2) Preheat the oven to 180C/Gas 4.

3) Heat the griddle to high, remove any excess marinade from the chicken and place on the griddle. Griddle each side of the chicken for 3 to 4 minutes then place on a tray and finish in the oven for 15 minutes.

4) Squeeze a lime wedge over each piece of chicken and serve.
